Grease traps are essentially grease interceptors that reduce the amount of fats, oils and grease (FOG) that goes down kitchen drain lines into sewer systems. They’re typically located underneath three-compartment sinks or adjacent to dishwashers in restaurant kitchens, but can be located outside the building as well.
